Title: How does the ratio of H to O atoms compare in sucrose and maltose... in glucose and fructose...and in water?

Here is a start:
The empirical formula for both glucose and fructose is C6H1O6.  BOth sucrose and maltose are disacchirides: sucrose is a combination of glucose + fructose - one molecule of water;  maltose is a combination of glucose + glucose - one molecule of water.  Count up the total number of oxygens and hydrogens you have in each disaccharide compared to the total mumber of atoms.

Then, compare this to:  What portion of a water molecule is oxygen?  What portion of a water molecule is hydrogen?
