More and more scientists are becoming convinced of their existence.

Particularly this type of dragon, known as the sea serpent (not to be confused with sea snakes).
There have been many sightings and videos of them (the animal in the picture), Edward McCleary claims he escaped from one, that killed his comrades one-by-one, (and to add credence to the story, one of the bodies did wash to shore) does that mean they exist? They cannot thrive in the deep, as they are seen protruding a 10-40 ft neck above the surface of the water to breathe - making them effectively air-breathing reptiles, described as being between 100-500 feet in length!
(The Ogopogo, another famous dragon living in a lake, is said to have snatched a man from a boat. The man was never seen again.) There is a similar sea dragon attack account for Lake Chelan, in which a traveller was grabbed by something. Witnesses saw the dragon fly up with the man in its mouth and dive into the water.

how do you explain all the sightings, which due to their accuracy cannot logically be explained away as squid, fish etc. (no sea reptile sticks its head out, and has a distinctive dragon's head, horns, and a mane, etc)

Short answer is no. Could have been the boogie monster.

Simple explanation to all these sighting is imagination. Anyone can claim to have seen a monster, but what stands the test of time is proof. Unfortunately, that's where these people fall short of providing to a growing group of skeptics.

What is defined as dragon anyways? Is it the kind of monster that spits flames? Or a big lizard like a dinosaur? Anyways, it is quite unlikely for such large animals to exist (or to have existed recently) without leaving any strong evidence, apart from a couple of reports.

On the flip-side, there are animals that produce some toxic chemicals, such as the bombardier beetle. When threatened, the bombardier beetle produces a powerful blast of boiling toxic chemicals from its posterior.
