How long could she hold her breath for?

she didn't say, but she said she can't hold her breath any longer than other people and gets out of breath easily when running up hills etc.

There's definitely a correlation if this happened suddenly after the injury. We can only speculate if the correlation is valid. If CO2 levels DO increase, they are regulated by the blood. Can't see how anyone could tolerate acidic blood for too long anyway.

She was sort of overweight.

Apparently there are surgeries where the vestibular system is removed or destroyed. Do people die shortly after these surgeries in their sleep? Since during sleep breathing can become irregular, and if they cannot sense a rise in CO2 due to a lack of vestibular system/vestibular function that could be dangerous.

It's a possibility, certainly not due to a rise in CO2 though.
