I need to know how to find the number of neutrons in an atom without looking at the periodic table. I know the number of Protons is the atomic number and the number of Protons is equal to the number of electrons and that 2 electrons fit in the first shell and 8 in the rest. I know the mass number is the number of protons and neutrons. But How do I find out how many neutrons?
Do I subtract the atomic number from the mass number?

Yes, because the mass number is the number of protons and neutrons, subtracting the atomic number (protons) from it would give you just neutrons. The weight of electrons is negligible.
