What is the point of regulating blood glucose using two hormones with antagonistic effects rather than a single hormone that changes the levels in one direction?

Not sure, but these hormones target different receptors. You can't have the same hormone do the same thing... In terms of why it evolved this way, probably has to do with negative/positive feedback
