In common with other organisms S. Salivarious metabolizes sucrose by breaking it down into it's constituent glucose units. It will grow even faster on a glucose agar than on sucrose agar because it doesn't have that bit of work to do and so the resources used in doing it are not necessary for that purpose and can be used for other activities of the cell.
