Fibrous Proteins have little or no tertiary structure. The are long, parallel polypeptide chains with occasional cross linkages that form into fibre. They are insoluble in water and are very tough.

Globular Proteins have a very complex tertiary and sometimes quaternary structure. They are folded into spherical (globular) shapes. The large size of these proteins affects their behavior in water.
