Galaxies in all directions appear to the red shifted, as if rushing away from us in the center of the universe.  How does the cosmological principle handle this problem?

It is not just us, but everyone, everywhere who witnesses the same cosmological red shift, as all space and time expand in the Big Bang.  Since space itself is expanding, there is no preferred direction and no center to the Universe.
