Fat-soluble vitamins are stored in the body for long periods of time and can present a high risk of toxicity if taken in large doses (e.g. supplements). It is rare to develop a toxicity from food sources of fat-soluble vitamins. Water-soluble vitamins are not stored in the body, and therefore the risk of toxicity is rare. It is important to note, however, that excessively high doses of water-soluble vitamins can still pose a health risk and should be avoided.
