Dennis' mother fixes him a peanut butter and mayonnaise sandwich for his school lunch. She freezes it, takes it out, and puts it in his lunch box. Describe what the sandwich is like by lunch time and what caused this to happen.

The bread on one side is soggy, and there may be some extra fat where the mayonnaise has separated. The emulsion in the mayonnaise broke during freezing. Ice crystals formed as the water froze. This broke the emulsion and the water and fat separated.
