That is simple. Heat will destroy living tissues. Cells are parts of living tissues. If you heat a cell beyond normal body temperature, it would die.

Most cells will die if they are exposed to temperatures too far above normal body temp--37 degrees Celsius. This is why enzymes are so important, they selectively allow certain reactions to proceed even at low temperatures.
