This is my science exit project, and i need help on the research and everything. Can anyone help me with it? Please help me in any way you can. and give me your source please, since i  need to dite every site or any source i used. thank you very much to whomever helped.

Albumen is a protein; pepsin is an enzyme that digests proteins.

Enzymes are also proteins, and all proteins are affected by temperature in the same way.

When temperature is HIGH, the enzyme will work faster, until it reaches the OPTIMAL TEMPERATURE. When it hits the optimal temperature, the enzyme function will then slow down, because the high temperature will denature the enzyme.

When the temperature is LOW, the enzyme will not have enough kinetic energy to function. However, the enzyme will not be denatured.

So, low temperatures lead to less digestion; high temperatures will increase digestion, UP TO A POINT WHERE IT HITS THE OPTIMAL TEMPERATURE. Afterwards, it will slow down again.
