This is because the CO competes with oxygen for the binding sites on the hemoglobin molecule. Although this may not apply to other such gaseous oxides, I think such gases are harmful because they resemble oxygen and are therefore harmful to animals. Molecules such as SO2 and CO2 are also harmful becuase they become acidic in water, becoming a pollutant and irritant sometimes.
