How 'strong' does a Heavy Duty Faraday Canopy have to be to shield electromagnetic ionizing radiation?

Very strong. Ionazing radiation has a very high frequency so a lot of matter is needed to shield the rays so no harm can be done (ionizing radiation can cause death of cells/mutation of cells which could lead to cancer)

That depends of the highest frequency contained in that radiation.  In general, you want to use a mesh screen which has openings less than 1/10 the wavelength of the radiation.
