Venom contains enzymes which destroy the DNA and protein components of their 'victims.'  Antivenin contains antibodies that specifically recognize these enzymes.  When the antibodies contained in antivenin come into contact when the venomous enzymes, they bind the enzymes and 'tag' them for destruction by the body's immune system.
