Title: Can you help answer my questions about sucrose, glucose, and fructose?

What happens when you add yeast sucrose in the absence of oxygen? What does it turn into? How do you turn sucrose into glucose and fructose? Is it as simple as adding water? And one more: can you make ethanol from adding yeast to fructose or does it only work for glucose? Thanks a lot.

When you add yeast to sucrose in the absence of oxygen, it will result in anaerobic fermentation (production of alcohol).  

To turn sucrose into glucose an fructose you need the enzyme sucrASE - water will not break the bond between the molecules.  

You can make alcohols by adding yeast to any sugar
