Chewing is an essential part of the digestive process and initiates the action of amylase, as well as breaking the bite into smaller macerated pieces for action by enzymes.

The bread, which consists chiefly of simple carbohydrates (sugars), starch and related complex carbohydrates is digested partly in the stomach by the salivary amylase, and to a greater extent in the intestine by various hydrolases (including more amylase from the pancreas, secreted into the duodenum) to glucose and other monosaccharides. These are absorbed in the intestine and further metabolized in the liver, but the glucose is also metabolized in every organ of the body.

The ham contains a small amount of some sugars (depending on the curing process), protein and fats. The proteins are hydrolyzed by several enzymes (peptidases) in the stomach, and the process continues in the intestine. The fats are digested by enzymes (lipases and other hydrolases) from both the pancreas (again secreted into the duodenum) and the intestine. Bile secretion (from the liver, via the bile ducts and bilary tract into the duodenum) is crucial in the absorption and emulsification of various kinds of fats as well. Fatty acids, mono-, di- and tri-glycerides are absorbed by the intestine and metabolized chiefly by the liver, but by other organs also. Other non-glyceride fats may be absorbed directly (cholesterol and related sterol fats) by the intestine and metabolized in the liver and in the blood stream.
