Atomic Mass and Atomic number. How do these numbers play a part in determining the number of elections that an atom should have (If at all)?

in general, a not ionized atom has the same number of electrons as protons. and since the atomic mass increases with the number of protons, one might say that the number of electrons increases as well

Let me correct you first. The atomic mass and atomic number don't affect the number of electrons of an atom. The number of electrons affect the atomic mass and atomic number of an atom!
1)The number of electrons of a neutral atom is the same as the atomic number of the atom.
2) The sum of electrons, protons and neutrons of an atom give its atomic mass. Electron number is always ignored though since it is so small ( a single electron weighs only 1/3600 amu!)
