Title: What is the function(s) of Polysaccharides?

I know polysaccharides store energy/carbohydrates and it helps with plants' structure. If you could give me a little more detail that'd be great.

And also, HOW does it do those things? How does it store energy (like, what does it do to do that?)

I'm doing a project where I have to "teach" the other students about Polysaccharides in an understandable way. So if you can maybe "dumb it down" a bit ;)

polysaccharides ARE CARBOHYDRATES. A GOOD EXAMPLE IS CELLULOSE IN THE CELL WALLS OF ALL PLANT CELLS

polysaccharides ARE STORED AS STARCH IN PLANTS. THE POTATO IS ALMOST ALL STARCH

polysaccharides STORE ENERGY IN ITS CHEMICAL CARBON-CARBON BONDS.
                              WHEN THESE BOUNDS ARE BROKEN DURING THE  
                              BREAKDOWN OF polysaccharides (HYDROLYSIS) ATP IS
                              PRODUCED (ENERGY MOLECULE)

THE ENERGY TO FORM THE CARBON BONDS ULTIMATELY COMES FROM THE FIXATION OF CO2 DURING PHOTOSYNTHESIS
