How can you rehydrate an anhydrous salt so it will become a hydrate again?

You don't just pour water on it!  How for example are you going to get beautiful crystals of CuSO4.5H2O with the correct stoichiometry from powdered CuSO4?
Answer: You recrystallize the anhydrous compound from water.
