Simple carbohydrates consist of one or two simple sugars. They are a primary source of energy during exercise and are required for normal brain function. Complex carbohydrates include glycogen, starches, and fiber. Starches are long chains of simple sugars. Fiber is a nondigestible form of complex carbohydrate but is essential because of its role in the formation and elimination of waste products. The healthiest food sources of carbohydrates are whole foods such as vegetables and fruits.
