Why would the host-cashier process the payment of a guest check before seating arriving guests?

The host should always immediately acknowledge an incoming guest while processing guests' payment. Guests who have finished dining, and wish to leave, should not be inconvenienced by having to wait to pay for their meal. Also, many guests do not put down a tip until after they have paid and acquired change. Therefore, the process should be made quick and easy for the guest.
