The three main Persian rice dishes are:
1 . Kateh
2 . Chelow
3 . Polow
The method of making kateh is to cook rice with water and salt first uncovered until the
water is gone. Butter or oil is drizzled in, then the pot is covered and allowed to steam
until a sticky compact cake with a golden bottom crust forms. This is a very unique style
of cooking rice that doesn't exist elsewhere. It is often thought that the Persian-Iranians
are the preeminent cookers of rice in the world.
