"Echo sounding" sonars are used to measure the depth of water beds. It works by measuring the time between transmission and echo return, after having hit the bottom and bouncing back to its ship of origin. The acoustic pulse is emitted by a transducer which receives the return echo as well. The depth measurement is calculated by multiplying the speed of sound in water (averaging 1,500 meters per second) by the time between emission and echo return.

No issue with accuracy. I'd say they're very reliable. Of course for deeper water beds, you'd  need a better frequency to ensure you're not hitting swimming fish

I suppose so, but it'd need to have all the components of a sonar, including a transducer and a lot of other technology not specific to phones. An app would not be able to use the pre-existing hardware on one's phone to perform the tasks of a sonar.

Indeed, but make sure it's waterproof and water resistant , has pressure resistant components, and is shatterproof.
