There are 5 different orders of knighthood, and each has a different criteria. A knighthood or damehood can be presented for all types of different achievement, but usually the person nominated will have made a major contribution to the country at a national or international level; their work and achievements will be viewed as an inspiration to others; and they may have influenced their peers, industry or the nation through their sustained and outstanding commitment to their chosen area.

When speaking of Mary Kom, while she does not have to be British (according to one source), it helps with the recognition. I'm certain if she was more recognized around the globe - I, for one, did not know who she is - then she'd be nominated to this title. Also keep in mind that of the 3000 people nominated/knighted, 2% have rejected it.
