 37C the appropriate temperature to use in the experiment on salivary amylase because that is the optimal temperature for that specific enzyme and performs at it's peak to break down starch. 37C is also our body temperature and since salivary amylase resides in our mouth it make sense that the optimal temperature to be 37C. Whenever an enzyme is exposed to higher temperature that are not optimal then the enzyme denatures and doesn't work. If at lower temperatures the enzymes is still functional, but doesn't make as many products so the perfect temperature (optimal) is 37C
