The water will diffuse down the free energy gradient of water, not the free energy gradient of the solute (sucrose).

Hence depending on the water amount osmosis is performed to make it isotonic or to bring it to equilibrium. A minimum concentration gradient must be present, as it solvent moves from low solute to high solute concentration.

In the process of diffusion molecules move from higher concentration to lower concentration. For instance, if rubber tubing piece is filled with 50% solution there should be minimum concentration of solution about less than 50%. Thereby, if the concentration in rubber tubing is less than 50%, attains area of lower free energy. Thus, matter diffuses from higher free e nergy to lower free energy. The process is mediated by diffusion.

In the above experiment, tubing acts as permeable membrane to create similar environment. Thus, net movement of molecules would be from higher to lower concentration. Osmosis is common diffusion in biological system. The process mediates the flow of water across membrane.
