My aim is to design an experiment in biology (A-level) to see the effect of fructose and glucose on the rate of respiration of yeast. What experiment could I set up in to test for this?

Make a solution of yeast cells and divide it in two (or more if you want to get fancy, but we'll stick to two in this example). Add a solution of glucose to one and fructose to the other. Make sure you add the same amount and concentration.
As the yeast cells consume the sugars, they'll develop CO2 gas. Catch this and measure the production. You can do this fairly easily with a setup like this: http://imageshack.us/photo/my-images/14/chemitsry.jpg/

This will allow you to see the difference between the two sugars.
