They most likely go extinct.  It is more correct, however, to say that species that are not able to adapt as well to changing environmental conditions will not survive as well as those that can.

Natural selection they will either die (adapt not evolve evolution takes hundreds of thousands of years) or If their lucky enough there unadapted/evolved form might be superior enough to withstand the new environment they will eventually prosper. Scientifically this is all one big random coincidence biblically everything in life has a purposeful reason.

This is related to Darwin's natural selection.  Basically, the ones that don't keep with the Jones die and
the survival of the fittest will continue to reproduce and have certain heritable traits that make them
adapt to the environment more so than their competitors.

If they cannot adapt then they become extinct. Nearly all species that have existed on Earth have become extinct. It is a normal evolutionary event.
