What do roller coasters use to travel up a hill and then finish a circuit? Is it momentum or velocity? Or something else? Please explain the science of this. Thanks!

they take you up high so then all the potential energy you have gets turned into kinetic energy and through the conservation of energy back into PE and this intial PE can take you around the entire track

Momentum.

A chain-gear is used to pull the roller coaster the rest of the way up the track once gravity brings it to a stop.

Velocity is what you feel with every fall and turn. (Velocity is speed and direction.)

A motor or ejection system launches the roller coaster.  Gravity and inertia keep it going.  Brakes make it stop.
