I know that dot product is just scalar, and that it doesn't give direction.

In contrast. cross product gives you quantity and direction.

But when it comes to applications (physics), what is the main difference on how each is used?

Like for example, how each would be used (if used at all), between two vector forces pointing at different directions?

I can't quite remember.

But I do recall a version of Maxwell's equations written in vector form, and I think the force on a charge moving in a magnetic field is a vector product of velocity and field strength
