When weighing marine invetebrates (crabs etc) in water (by this I mean weighing the container and water first then adding the animal), is there another reason to why this is done besides to keep the animal comfortable? I mean it makes sense to do so since the animal prefers to be in water but is there another reason? If the crab was dried and weighed would that somehow give a different weight than if it was weighed in water?

I don't think keeping them in water changes the animals weight - in fact, that idea is physically impossible. It is primarily done to keep the catch fresh in its own environment.
