Glucose oxidase is an enzyme which catalyzes the oxidation of glucose to gluconic acid and hydrogen peroxide. Glucose oxidase has broad range of applications including (i) removal of oxygen and glucose for food and bevarage preservation, (ii) as biofuel, (iii) production of gluconic acid, and (iv) majorly as glucose biosensor.
