Water is a participant in the process, adding -H and -OH groups either side of the glycosidic bond.
The reaction is called Hydrolysis.

Water. Hydrolysis.

A disaccharide is basically R-O-R, where one R is one monosaccharide and the other R is the same or other.

R-O-R + H2O ===> R-OH + HO-R

For example:

Maltose + H2O ===> 2Glucose

Lactose + H2O ===> Glucose + Galactose

Sucrose ===> Glucose + Fructose
