For my science class, I have to grow a plant and figure out how salt (sodium chloride) affects the germination rate of the seeds. What would be a good plant to use for this experiment? It has to grow in soil.

any plant with a large seed will be good.  Mung beans (sprouting beans) mustard seed, cress etc.
If it grows in soil you will have difficulty measuring salt concentration - why not just use wet tissue, sand, or blotting paper?
