Why is it inaccurate to simply state that the lateral hypothalamus is the feeding center whereas the ventromedial hypothalamus is the satiety (fullness) center?

The LH and VMH influence eating and body weight in a variety of ways. It is not as simple as wanting to eat and feeling full. Research has shown that animals with LH damage will eventually resume eating after an initial period of refusing to eat. Similarly, research has demonstrated that damage to the VMH is not permanent as animals with VMH damage will eventually stop overeating. Additionally, people eat when they are not hungry. It is also possible to be hungry but not be able to eat for a variety of reasons.
