What effect will a change in enzyme concentration have on the rate of catalase activity?
And why is this?

Generally, (especially at relatively low concentration), an increase in the amount of enzyme will inc rease the rate of activity.  this occurs because there is a limit to how fast enzymes can break down a substrate - therefore, if there are more molecules of enzyme, more substrate will be broken down.

The rate of any reaction including that of an enzyme is affected by the concentration of the substances. The higher the cocentration the faster the reaction (activity).
While our parents were not biochemists or biologists they usually insisted that we refrained from drinking when chewing our food. This kept the concentration of the enzymes in the mouth at a high level and increased their action.
