This trend is best understood in terms of the stability of the conjugate base that would be formed upon deprotonation of each of these acids. One explanation is that the negative charge of the acetate anion (CH3CO2-), the conjugate base of acetic acid, is delocalized over the two oxygen atoms by resonance. In contrast, in the ethoxide anion (CH3CH2O-), the conjugate base of ethanol, the negative charge is localized on a single oxygen atom.
