I am currently doing my honors degree thesis/dissertation in electrical engineering, and am researching the effects of different materials acting as magnetic wedges within the stator slot of a reluctance synchronous motor. I have the materials B-H curve data, but need their respective permeabilities.

The permeability varies(as you say the curve is non-linear).To find the permeability at any particular value of B (or H)divide the B value by the H value at the required point on the curve.Above about B=1.7T the steel approaches saturation.
