I read in sites that an emulsifying agent stabilses the globules of oil. WHAT does Stabilising mean??? like supporting the molecules together? any good explanation or sites that explain what stabilzing means?

stabilizing means making it less likely to react, less reactive


OR transforming it from a more reactive to a less reactive substance by lowering its energy level, by means of a usually exothermic chemical reaction that releases energy.


The higher the energy level of the substance, the less stable it is. Hence the energy content of the substance has to be decreased to increase its stability.
