I know it has to due with dehydration, and water being pulled from the lens, I just can't explain the physiology that makes it happen, please help. Could the blurred vision be from high glucose levels also? Thanks

The word polyuria means excessive urine outoput, polyeria occurs in diabetes because the normal amount of glucose that is filtered is not reabsorbed. This can cause the amount to exceed whwt the kidney tubules are able to handle. The high glucose amount draws water into urine, causing excessive urination or polyuria.
