When used to describe fruits and vegetables, fresh can mean anything from never frozen to never processed. Choose one fruit and one vegetable (e.g.

, peaches and broccoli) and write a complete menu description of fresh for them. Do you think the customers for whom you buy would agree with your definition of fresh? Why or why not?

Student answers to this question will no doubt vary. The purpose of the question is to focus student attention on the importance of menu descriptions as these descriptions relate to guest understanding. In all cases managers should strive for accuracy and honesty in their menu descriptions. While managers and their guests may not agree 100 on product description such as Fresh or Homemade the use of these descriptions must always be clear, accurate and completely defensible by management.
