The Opadry coating and sodium naproxen are both soluble in water. If water were used, some of the sodium naproxen would dissolve in the solution along with the Opadry. Separating these would be difficult. Sodium naproxen is not very soluble in ethanol and the Opadry coating is easy to remove using ethanol. Therefore, ethanol is the solvent of choice for removing the coating.
