pH is literally the regulatory authority that controls all cellular processes...without efficient cellular processes there are no proteins, energy, etc...which means there is no life. So, if your pH drops too low or gets too high, cellular processes leave homeostasis and the cell does not function correctly to support life.

A low pH can be life-threatening because the change in hydrogen ion concentration can cause certain proteins, such as vital enzymes, to become inactive. When this occurs, the proteins become nonfunctional, and if they catalyze reactions that are necessary for life, life will cease.
