The Control phase is so critical because this is the phase where we need to make sure that our implementation of the new or redesigned process is happening and being maintained. Make change happen and make sure it sticks We want to make sure all our hard work, planning, analyzing, measuring etc., is followed-through during this phase. The Control Phase may be implemented and monitored through the collection of data, creating processing charts, identifying variation, documenting project data, etc. are just some of the few ways.

This is mainly a brainstorming question where students can use their personal experiences to identify problems in restaurant operations that they have experienced and believe could be improved with the application of the methods taught in the module.

For example: A student describes a situation in which they were seated at a restaurant in which multiple waitstaff refilled her water about 15 times when it was already full. She believes that there was a lack of communication between the servers and that they were also overstaffed for the operation. She believes that they could reduce this waste by more effectively scheduling their staff. Also, that one person should be in charge of providing refills so that the service does not become so repetitive.

The largest deterrent that other hospitality companies have encountered when considering a Six Sigma of their own is the high financial investment that is necessary to get the program off of the ground. Also, starting a Six Sigma program requires a shift in the company culture, which could provide additional obstacles and time to take effect.

a . If the issue is a generic problem that is occurring across many properties then Six Sigma would be the best choice.
b. If the issue requires a tailored solution that would only apply to this specific problem then Lean may be the most effective option. In addition if the problem is dealing with the reduction of waste then Lean would also be an appropriate choice.
c. If entry-level employees are the ones identifying a departmental problem then Kaizen should be used to solve it.
