E. coli and other enterics naturally inhabit other animals' organs such as the intestines, where they generally do not cause harm. Improper handling when such infected organs are removed can result in accidental contamination of meats. Infected ground meats are especially of concern, because the meat must then be fully cooked to kill the pathogens.
