PhysioEx 9.0   Exercise 8 Review sheet: Describe  the significance of using a 37 degree C incubation temperature to test salivary amylase activity.

List the substrate and the subunit product of amylase.   would that be:  substrate = starch and subunit= maltose?

The substrate of amylase is animal starch and the product is maltose and glucose.

Thank you  i did not know glucose was an option, did not see the mention of it anywhere in the book or in experiments, why is that?
