When glucose and fructose undergo a condensation reaction, water is removed by the combination of a hydrogen from one and a hydroxyl group from the other.  What forms between glucose and fructose is a glycosidic linkage and what is left out is that hydrogen and hydroxyl.  H and -OH make HOH, which is H2O
