What interactions does cholesterol have with the phospholipids, so that it decreases the fluidity of the plasma membrane?

It forms hydrophobic interactions with the fatty acid tails of the phospholipids, prevents the phospholipids from moving too far apart.

Cholesterol acts as a buffer in the phospholipid membranes. Because the phospholipids are pretty flexible (fluid mosaic model) the cholesterol helps to keep them in place. they are placed in between the hydrophobic tails, and therefore it is hydrophobic interactions that decrease the fluidity.
