Amylase is an enzyme that digests starch. You produce it in your salivary glands. Starcch digestion begins in the mouth.

Protease is an enzyme that begins digestion of proteins. Protein digestin begins in the stomach and continues in the small intestine.The pineapple produces it and it is found in meat tenderizer.

Amylase and protease are generic names for a family of enzymes which are produced in the pancrease and are critical for the digestion of starches and proteins respectively.  Lipase digests fats (lipids) and is also produced in and excreted by the pancrease.  It is a very busy little organ for it is also the producer of insulin!
